Abstract The basic orientation of future development in agriculture and food industry in Serbia is in the utilization and
preservation of available production capacities, an increased volume of agricultural production, and modifications
of production structure towards intensive productions, the production of high final and high-quality
products. Goat milk and goat cheese occupy a significant position in the production of quality food in dairy
industry. In our country, due to a large number of hilly and mountainous land, the potentials for the development of goat products industry are considerable, where a significant place is given to the production of white goat cheese. | Apstrakt Osnovni pravac buduceg razvoja poljoprivrede i prehrambene industrije Srbije je u optimalnom korišcenju i ocuvanju raspoloživih proizvodnih kapaciteta, povecanju obima poljoprivredne proizvodnje, izmeni proizvodne strukture u korist intenzivnih proizvodnji, proizvodnji visoko finalnih i visokokvalitetnih proizvoda. Kozje mle-ko i kozji sirevi zauzimaju znacajno mesto u proizvodnji kvalitetne hrane u mlekarstvu. U našoj zemlji, zahvaljujuci brdsko-planinskim podrucjima, postoji veliki potencijal za razvoj kozarske proizvodnje, pri cemu znacajno me-sto zauzima proizvodnja belih kozjih sireva.
